Honduras (Copan region) & Bali (Kintamani Highlands)
Joyeux Noël brings together the distinct characteristics of beans from two unique origins: Honduras and Bali. The Honduran beans, grown in the Copan region at elevations ranging from 1100-1500 meters above sea level, contribute a smooth acidity and a nutty sweetness. Cultivated on small farms, primarily using Bourbon, Catuai, and Caturra varietals, these beans are carefully processed at the mill in Villanueva.
These farms, often family-owned and operated, prioritize sustainable practices that protect the surrounding environment. The Balinese beans, are grown in the volcanic loam of the Kintamani Highlands of Central Bali, Indonesia, add a rich, fruity depth to the blend. Cultivated at altitudes between 1200 and 1600 meters above sea level, these beans, primarily of the Bourbon, Typica, and Catimor varieties, are harvested between May and October.
The coffee producers, organized through Subak Abian (SA), a traditional farmer organization in upland Bali, utilize a full natural process and dry the beans on raised beds. This unique process contributes to the beans' distinctive body and subtle spiciness. The combination of these two origins creates a harmonious blend that embodies the spirit of the holidays.
